Red Velvet Cupcakes

E: Cuz sometimes you just want to live a little. I made these cupcakes for Valentine’s Day mostly to treat my sister in law Jocelyn. Once I find a topping with a lower sugar content I will share it. This ended up yielding about 16 cupcakes. 


Dry Mix:

2.5 cup flour

1.5 cup sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cocoa


Wet Mix:

1.5 cup canola oil

1 cup buttermilk, room temp

2 eggs, room temp

2 tablespoons red food coloring

1 teaspoon vinegar

1.5 teaspoon vanilla


Pre-heat oven to 350 degrees. Combine all dry mix and sift together. Combine wet mix and mix on medium speed. Slowly incorporate the dry mix into wet mix. Place batter into cupcake holders. Bake for 20 minutes on 350 degrees.
