Baby Bellas, Super-greens and Poached Egg
yields: 1-2 servings
E: A super simple breakfast. Some greens, some mushrooms, a perfectly poached egg. Yum. Top with siracha. Enjoy.
canola oil spray
7 baby bella mushrooms, cut into slices
2 cremini mushrooms, cut into slices
1 cup of spinach
2-3 garlic teeth, crushed
maldon sea salt
1 large egg, poached
1 tablespoon grated parmesan cheese (exclude for paleo diets)
½ avocado, cut into thin slices
Heat a skillet to medium heat. Spray pan with canola oil. Saute mushrooms for about 5 minutes. Add spinach and saute for another 3 minutes. Add crushed garlic, salt and pepper. Saute for another 2 minutes. In a separate pan, poach one egg. Place egg on top of veggies. Top with parmesan cheese and some slices of avocado.
