Protein Packed Mexican Style Eggs

E: I knew I was going to have a long-day today and possibly skip lunch. I started off with this baby. I used small organic eggs. We bought a 5 dozen pack from Costco, but the eggs are smaller than usual. I had salsa on hand as I usually do. If you don’t already have that then you are going to want to make that first which may take time. I ate these eggs with half a piece of toast and some papaya. It’s much like huevos rancheros without the tortilla and more egg whites for extra protein. Hope you like. 

1 teaspoon avocado oil

1 egg yolk, small

4 egg whites, small

salt and pepper

pinch of red chilli flakes

2 tablespoons salsa

1 tablespoon queso fresco, crumbled

¼ avocado, sliced


Spray or drizzle avocado oil in small pan. Bring to medium heat. Break in one whole egg with yolk. Break another three eggs and separate the yolk from the whites with your hands so that the whites run down to pan and toss the yolk. Add salt, pepper and pepper. Cover with lid and let it cook to the perfect runniness that you like. Take off the pan and slide onto plate.

Slather thin layer of salsa. Plate the avocado and top with crumbled cheese.
